Cold Soba Sesame Noodles
Cold Soba Sesame Noodles
1/3 cup toasted black sesame seeds
8oz soba noodles
2 teaspoons rice wine vinegar
5 teaspoons soy sauce
2 teaspoons buckwheat honey
2 teaspoons sesame oil
5 scallions
2 sheets toasted nori
1 cup bok choy, chiffonade
Toast sesame seeds in dry pan until toasted.
Bring large pot of water to boil. Cook soba noodles for 5-6 minutes. Have bowl of ice cold water ready to plunge them into after draining.
Mix soy sauce, vinegar, honey, and sesame oil. Mix in chilled noodles. Toss with sesame seeds, scallions, and bok choy.
Serves 4-6

i liked the bok choy but the noodles weren't my favorite. that is really the opposite of the usual me.

I thought it was really good. I have never tried the Nori and I thought it taste like seewead. i loved the asian taste.

I have a Ramen Noodle cookbook at home and it has this recipe made with Ramen Noodles. I'll have to make it on Sunday.
ReplyDeleteThis would be better with ginger, but then, in my opinion everything tastes better with ginger.
I've never tried bok choy or soba noodles before.

I never had the bok choy and it was pretty good. I think it would have tasted better without the scallions and with apples and BACON!
